  1. Lay out whole grain tortilla. Spread almond butter out evenly on tortilla. Place banana in the middle of tortilla and add dash of cinnamon. Roll up tortilla starting from one end. Slice into bite-size rolls and place in bento box.
  2. Add your sides. I love to structure a balanced plant-based kids’ lunch with 3 main parts with servings from each + a healthy fat source:
  3. a. Grains & Starches - whole grain tortilla
  4. b. Fruit & Vegetables – banana, blueberries, carrot chips, red pepper slices
  5. c. Legumes, Nuts, & Seeds - handful of almonds
  6. d. Healthy fat - almond butter and avocado
