Method
- Preheat oven to 400 degrees for roasted chickpeas.
- Drain and rinse 1 can of chickpeas. Pat dry and place on baking sheet. Drizzle with extra virgin olive oil, salt, and pepper to taste, and roast for 20-25 minutes, flipping halfway.
- Cook your quinoa according to package instructions.
- Blend all tahini sauce ingredients into food processor and add water to desired consistency. Set aside.
- Chop the cherry tomatoes, red onion, and cucumber to assemble your bowl.
- Assemble your bowl starting with the quinoa, then mixed greens, red onion, cherry tomatoes, kalamata olives, cucumber, scoop of hummus, roasted chickpeas, and drizzle of tahini sauce. Add extra fresh parsley and a squeeze of fresh lemon if desired!
