Amazingly Creamy Homemade Hummus

- Drain and rinse (2) 15oz cans of chickpeas.
- Add to pot and cover with 1” of water. Add 1/2 tsp baking soda to pot (baking soda helps to soften the skins and gives an extra creamy end result!) This step is what’s going to give your hummus that amazingly, creamy texture.
- Bring to boil, then reduce to simmer for 20 minutes.
- Drain chickpeas, then transfer to food processor. Blend for 1-2 minutes, scraping down sides as you go.
- Add to the food processor 3/4 cup tahini, juice of 2 lemons, 3 chopped garlic cloves, 2 tbsp extra-virgin olive oil, 1 tsp cumin, 1/2 tsp salt, and pepper to taste. Blend and add in 1 tbsp ice water at a time til desired consistency (I used 6 tbsp for reference).
- Feel free to flavor your hummus with cilantro, jalapeños, red peppers, or whatever hummus you fancy!
- Paprika, red pepper flakes or parsley for garnish!
- Serve with chopped veggies and/or warm pita bread and enjoy!
