Instructions

  1. Heat olive oil in large pot over medium high heat.
  2. Add onion, celery, and carrots and saute for approximately 7-10 minutes, stirring frequently.
  3. Add garlic, thyme, sage, oregano, and salt/pepper. Cook until fragrant or 1-2 minutes.
  4. Add vegetable broth, coconut milk, and Cannellini beans to pot. Stir to combine and cook for another 5 minutes.
  5. Stir in kale and vinegar. Use immersion blender to blend about half of the soup.
  6. Serve and enjoy soup topped with some fresh parsley and macadamia “parmesan.” (grate whole macadamia nuts with fine grater)
