- Heat olive oil in large pot over medium high heat.
- Add onion, celery, and carrots and saute for approximately 7-10 minutes, stirring frequently.
- Add garlic, thyme, sage, oregano, and salt/pepper. Cook until fragrant or 1-2 minutes.
- Add vegetable broth, coconut milk, and Cannellini beans to pot. Stir to combine and cook for another 5 minutes.
- Stir in kale and vinegar. Use immersion blender to blend about half of the soup.
- Serve and enjoy soup topped with some fresh parsley and macadamia “parmesan.” (grate whole macadamia nuts with fine grater)
