  1. Preheat oven to 400 degrees and line a sheet pan with parchment paper.
  2. Cut up all your veggies and place in a large bowl. Add olive oil, seasoning and salt and pepper to taste and mix well.
  3. Spread onto sheet pan and roast for about 25 minutes in the oven (flipping halfway) or until tender and lightly golden brown.
Pasta & Sauce
  1. Cook pasta according to package instructions, drain and set aside.
  2. In a large sauce pan, heat pan to medium heat. Add in olive oil, garlic and tomatoes and cook for about 4 minutes.
  3. Add vegetable broth, reduce to simmer for about 10-15 minutes until broth is reduced by half.
  4. Remove pan from heat and stir in vegan butter, salt, and pepper to taste and top with fresh parsley.
  5. Gently stir in your roasted vegetables and top with vegan parmesan if desired. Enjoy!
