- Preheat oven to 400 degrees and line a sheet pan with parchment paper.
- Cut up all your veggies and place in a large bowl. Add olive oil, seasoning and salt and pepper to taste and mix well.
- Spread onto sheet pan and roast for about 25 minutes in the oven (flipping halfway) or until tender and lightly golden brown.
Pasta & Sauce
- Cook pasta according to package instructions, drain and set aside.
- In a large sauce pan, heat pan to medium heat. Add in olive oil, garlic and tomatoes and cook for about 4 minutes.
- Add vegetable broth, reduce to simmer for about 10-15 minutes until broth is reduced by half.
- Remove pan from heat and stir in vegan butter, salt, and pepper to taste and top with fresh parsley.
- Gently stir in your roasted vegetables and top with vegan parmesan if desired. Enjoy!
