Method
- Place cashew ice-cream filling ingredients in blender and blend until combined and creamy.
- Pour ice-cream filling into molds until they are almost full, leaving a little room for the caramel. Add in the sticks or wooden sticks and place the molds into the freezer for a couple hours.
- Meanwhile, prepare the raw salted caramel dip. Blend all ingredients in Vitamix or food processor. You will have to scrape down the sides intermittently until rich, creamy consistency is reached.
- Remove ice-cream molds from freezer and spread a thick layer of raw salted caramel evenly into the remaining portion of the molds. Place back in freezer for 1 hour or until the caramel has firmed up.
- Roughly chop the cashews and place on a flat plate.
- Mix chocolate coating ingredients in small bowl until smooth.
- Dip each bar into chocolate coating, covering entire bar, and then onto plate of cashews before chocolate hardens.
- Place finished caramel cashew crunch bars onto parchment-lined baking sheet and place in freezer to fully freeze until ready to enjoy!
