Instructions
- Preheat oven to 425 degrees. Toss butternut squash and brussel sprouts in olive oil and seasoning. Roast for around 30 minutes, flipping halfway, and until golden brown on edges.
- Bring 2 cups of quinoa and 3 1/2 cups water to boil, then reduce to simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes. Fluff with fork before serving.
- Pulse herbed tahini sauce ingredients in food processor until smooth. Season with salt and pepper to taste.
- In bowl combine: quinoa, spinach, roasted veggies, herbed tahini sauce and enjoy!
