Vietnamese Inspired Noodle Spring Rolls with Spicy Peanut Dipping Sauce

Spicy Peanut Sauce
Instructions
- Whisk together spicy peanut sauce ingredients, set aside.
- Cook soba noodles per package instructions. Drain and toss noodles with a spoonful of peanut sauce and set aside.
- Heat about 1/2 tsp extra virgin olive oil in small skillet over medium heat. Add shiitake mushrooms and cook about 5 min, or until browned and soft. Remove from pan, toss with a splash of coconut aminos and set aside.
- Dip rice paper wrappers in warm water for 5 seconds (not any longer or they will become too sticky). Place on a sheet of parchment paper.
- Fill rice paper wrappers with noodles, shiitake mushrooms, micro greens, basil, mint, sliced cucumbers, avocado, and black sesame seeds.
- Wrap and tuck in the short ends first, then the sides and roll until wrapper is tightly closed and sticks onto itself.
- Serve with the peanut sauce for dipping and enjoy!
